It is essentially khoya (milk solids derived from buffalo milk) rolled into balls, deep fried and immersed in a decadent sugar syrup that is flavoured with rose water and saffron! The people of Rajasthan however, have made a savoury variation of this dish which is sure to knock your socks off! Mana Ranakpur shares this extraordinary recipe from its kitchen with you!<\/p>\n<h2><strong>Ingredients Gulab Jamun ki Subzi<\/strong><\/h2>\n<p>Mawa (Khoya) 250g<br \/>Green Cardamom Powder 5g<br \/>Sugar 4g<br \/>Cottage Cheese 100g<br \/>Cinnamon Powder 3g<br \/>Onion 1kg<br \/>Green Chilly 20g<br \/>Ginger 5g<br \/>Garlic 5g<br \/>Red Chili Powder 8g<br \/>Turmeric Powder 4g<br \/>Coriander powder 2g<br \/>Cashew nut 200g<br \/>Green coriander 10g<br \/>Salt\u00a0 to taste<br \/>Deggi Mirchi 5g<br \/>Curd 100g<br \/>Coriander seeds 2g<br \/>Aniseeds 2g<br \/>Cumin Seeds 2g<\/p>\n<h2><strong>Stage 1: Preparing the Gulab Jamun balls<\/strong><\/h2>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Mash the mawa and cottage cheese together<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Mix green cardamom &amp; cinnamon powder<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Prepare small balls<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Fry in a slow flame<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Wait for colour to become light brown to remove from the oil and put aside for further preparation<\/p>\n<h2><strong>Stage 2: Preparing the curry<\/strong><\/h2>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Boil the onion and cashewnut<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Grind them to make a paste<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Take a pan and heat oil in it<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add coriander seeds, Aniseeds and cumin seeds. Wait for them to pop<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add ginger and garlic<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add the onion and cashew nut paste<br \/>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add all the spices and curd.
