A culture’s cuisine is heavily dependent on its natural surroundings. In the arid desert state of Rajasthan, most vegetables are hard to come by. However, beans are readily available. Gawar phali is a Rajasthani variety of green beans which is an important staple in the diet of the local people. A quick and simple dish, it’s delicious as well as nutritious!
Ingredients of Gwar Phali:
GAWAR PHALI (150g)
ONION (20g)
TOMATO (30g)
GARLIC (8g)
ANISEED (3g)
CORIANDER SEED (3g)
CUMIN SEED (2g)
GREEN CHILLY (20g)
TURMERIC POWDER (6g)
RED CHILLY POWDER (4g)
GREEN CORINDER (2g)
CHAAT MASALA (8g)
SALT (to taste)
CURD (20g)
MUSTARD OIL (20ml)
Method of Gwar Phali
Wash all the beans (Gawar Phali)
Cut into 2-3 cm size
Heat oil in a pan with cumin seed, aniseed, and coriander seed
When the seeds start to simmer, add onion and garlic
Sauté for 3-4 minutes
Add Gawar Phali and sauté it for 2 minutes
Add curd and spices (we add curd to remove the natural bitterness of gawar phali)
Steam for 10-15 minute
Add Chaat Masala
Serve with Tawa Roti
